The 550 room 4 star Novotel in Darling Harbour Sydney boasts panoramic views of the city or towards Olympic Park.

Project Design International worked in conjunction with the French based Accor architect and the Singapore based food and beverage consultant in designing and building the theatre kitchens—The Ternary, an intimate, harmonious, cultured, open-spaced dining concept embracing three pillars; Asian Cuisine, Grill and the Charcuterie Wine Bar.

In addition Project Design International designed joinery, stainless steel and specified and sourced custom Kitchen equipment. This involved what has been described as seriously complicated stainless steel, joinery, and stonework. The refrigeration system is a complex mechanical system with 30 remotely located refrigeration areas. The bespoke equipment was sourced from global suppliers and included an impressive wine tower, refrigeration and cooking appliances.

The Grill includes a bespoke circular grill, Moffat bold cooking equipment, induction technology. The Asian Cuisine includes Tandori Oven, Teppanaki Grill, Yakitori Grill, and woks with the latest technology induction.

The Novotel Darling Harbour is a world first theatre kitchen concept for the Accor Group. Project Design International were engaged to project manage the restaurants alongside the main building contractor and designed and built two theatre kitchens, a bar and a cafe, juice bar and a breakfast buffet area. This was an eighteen month process design and build process.
