The Husk and Vine restaurant Parramatta features an open kitchen dominated by a huge built in pizza oven. Public scrutiny of this traditionally hidden space is becoming the norm, and means that consideration needs to be given to all aspects of kitchen design, not just the functional requirements. Careful screening of the mundane function of dish washing while highlighting the more interesting cooking and serving functions, increases the engagement of chefs with diners.

PDI worked closely with the client to develop a kitchen which would meet their operational requirements within a strict budget. We liaised closely with the interior designer to meet the overall aesthetic, collaborating on the finishing details at that vital junction where the operational requirements meet the artistic vision. A challenging installation schedule and attenuated timelines meant that excellent communication with the builder and associated sub trades were essential, along with innovative fabrication and installation techniques.

The result is a harmonious interaction between the elegant front of house and the functional back of house, the heat and action in the kitchen adding a frisson of excitement to the dining experience.
